- 1 small avocado, skin and pit removed
- 1 cup shelled edamame, cooked until soft
- lime juice
- 3 chopped cherry tomatoes
- 3 tbsp. chopped red onion
- oregano, dried
- salt and pepper to taste
Pulse edamame with some water in a food processor until puree is smooth. Remove from food processor and add remaining ingredients. Mix well and serve with veggies or tortilla chips or use as a topping for a sandwich.
