If you’re looking for a quick, easy, delicious and healthy pancake recipe, you’ve come to the right place
- 1/3 cup quick-cook oats (important for making oatmeal pancakes!)
- lots of cinnamon
- a heaping tsp of baking powder (gives it the fluffiness)
- chia seeds (for omega 3s)
- half of a defrosted overripe banana (I have a bag full of them in my freezer)
- 1/3 cup egg whites
You can also add blueberries, canned pumpkin, or applesauce for a different twist.
Toppings I like to add include chopped walnuts, syrup, nut butter, and defrosted frozen berries (the juice makes for a nice syrup).
