Banana Oatmeal Pancakes August 15, 2010

If you’re looking for a quick, easy, delicious and healthy pancake recipe, you’ve come to the right place
  • 1/3 cup quick-cook oats (important for making oatmeal pancakes!)
  • lots of cinnamon
  • a heaping tsp of baking powder (gives it the fluffiness)
  • chia seeds (for omega 3s)
  • half of a defrosted overripe banana (I have a bag full of them in my freezer)
  • 1/3 cup egg whites
  • vanilla

You can also add blueberries, canned pumpkin, or applesauce for a different twist.

Mix everything and spoon onto a well greased pan. Cook covered and flip when lightly browned on the bottom. Cook for another 2 or so minutes until both sides are browned.

Toppings I like to add include chopped walnuts, syrup, nut butter, and defrosted frozen berries (the juice makes for a nice syrup).
