This is one of my old standbys and never fails to disappoint!

This contained:

  • 1/2 cup cooked bulgur (To cook bulgur, combine two parts liquid [I like to use chicken broth for flavor] and one part bulgur. Combine both and bring to a boil, then let simmer until the bulgur has absorbed the liquid and the bulgur is soft and chewy.)
  • ~3/4 cup chickpeas
  • 2 grape tomatoes, chopped
  • red bell pepper, chopped
  • cucumber, chopped
  • red onion, chopped
  • artichoke hearts, chopped
  • 2 kalamata olives. diced
  • crumbled feta cheese
  • Dressing: lemon juice, dijon mustard and olive oil

Combine all ingredients and mix well.
