This is one of my old standbys and never fails to disappoint!
- 1/2 cup cooked bulgur (To cook bulgur, combine two parts liquid [I like to use chicken broth for flavor] and one part bulgur. Combine both and bring to a boil, then let simmer until the bulgur has absorbed the liquid and the bulgur is soft and chewy.)
- ~3/4 cup chickpeas
- 2 grape tomatoes, chopped
- red bell pepper, chopped
- cucumber, chopped
- red onion, chopped
- artichoke hearts, chopped
- 2 kalamata olives. diced
- crumbled feta cheese
- Dressing: lemon juice, dijon mustard and olive oil
Combine all ingredients and mix well.
