I’ve had a craving for smoked salmon for weeks and finally decided to indulge myself. I picked up a small container at Russo’s the other day and decided that today was the day I’d been waiting for!

The stars of the dish:

My savory breakfast sandwich ingredients:

  • one whole wheat sandwich thin
  • 1 Trader Joe’s goat cheese medallion (microwaved for 5 minutes to make it spreadable)
  • ~1/4 cup egg whites, cooked into an omelet
  • sliced tomato
  • sliced red onion
  • spinach

Yum! This was just as good if not better than I thought it would be!

And I have my iced coffee (1/2 regular caramello + 1/2 decaf) ready to go for the car:

I don’t know if I’m ready for the heat again today :-/ Off I go!
