Yesterday’s breakfast was just so delicious that I had to make it again. It was maybe helped by the fact that I have smoked salmon in my fridge that I won’t be able to eat for breakfast for the next several days, since I’ll be exercising right after breakfast.
A whole wheat Arnold’s thin with light original Laughing Cow Cheese (this is the adaptation; yesterday I used a goat cheese medallion), smoked salmon, a splash of egg white cooked as a small omelet, spinach, tomato and red onion.
This kept me satisfied for 5 hours yesterday! It was light but super filling. Definitely a recipe worth making again (and again). Happy birthday to my hubby, Dave!
