We are heading off to go apple picking, so I”ll make this a quick post!
I felt kind of munchy this morning and had BLTs (bites, licks and tastes) of a couple of crackers with hummus and guacamole, a few baby carrots and a small handful of cereal.
Lunch was a salad with:
- organic romaine
- yellow tomato from our garden (that crazy plant decided that early fall would be a good time for a baby tomato…)
- organic green bell pepper
- organic cucumber
- red onion
- roasted red pepper
- roasted eggplant slices
- artichoke hearts
- 2 falafel balls
- TJ’s organic baked tofu
- fat free feta crumbles
Topped with Annie’s Goddess dressing.
Pita chips on the side (it was a very small pita). Baked in the toaster oven at 375 degrees for about 7 minutes until browned.
Off we go! It’s the most beautiful day for fruit picking!
