Leftovers are so awesome because it makes packing my lunch super easy! Today’s lunch is leftovers from Sunday’s lunch: red quinoa with black beans, corn, bell pepper and creamy cilantro dressing.

and a Cabot’s cheese slice.
The forecasted high temperature for today is in the mid 80s, about 10 degrees cooler than last week! I’m hoping that my room will be a pleasant place to be today. I have gym plans for later tonight, so I’ll be back much later tonight with a recap of the rest of my day.
