I absolutely love lunch during the school day. It is a blissful 22 minute break (yes, I don’t know how a 22 minute lunch break is legal?!) in the middle of a hectic day. I am fortunate enough to have the classroom right next to the teachers’ room, so I have a small distance to travel and am first in line for the microwave!
Lunch today is a salad with:
- spinach
- mini heirloom tomatoes
- mushroom
- cucumber
- red pepper
- red onion
- falafel balls
- baked tofu
- fat free feta crumbles
- chopped olives
- tabbouleh
Dressing made of plain greek yogurt, lemon juice, olive oil, salt and pepper.
A pluot for dessert.
Snacks for today include a vanilla Oikos yogurt
and an apple with peanut butter.
Praying that this headache I’ve had since Friday is on its way out. The sooner the transition to fall comes, the better.
