To Make Tzatziki:
1. Make tzatziki at least an hour before you plan to eat dinner. First, put some plain greek yogurt in several paper towels around it to let it absorb all the liquid. Don’t be afraid to use as many paper towels it takes before you don’t feel any moisture on the outside.
After one hour, it should look like this.
2. Next, add minced cucumber (the ratio of yogurt to cucumber should be 2:1), olive oil, garlic powder and salt. Mix well.
1. Grill flattened chicken breasts until cooked through.
2. Spread hummus on one side of a whole wheat bun, and tzatziki on the other. Add feta crumbles, tomato slice, lettuce and a thin red onion slice.
