In a blender, combine equal parts rolled oats, egg whites and cottage cheese (I use 1/3 cup for each) with cinnamon and vanilla extract. Pulse until blended. Next, add 1 tsp. baking powder (for flufiness), 1 tsp. chia seeds and the same amount of thawed frozen blueberries that you used for the oats, egg and cottage cheese. Cook, covered, on a well-greased skillet over medium-high heat. Flip when the bottom is golden brown. Serve when both sides are cooked.
Top with more thawed frozen berries, nut butter, syrup or nuts. Enjoy!
