Pumpkin Overnight Oats October 13, 2010

(Again, I apologize for the poor photo quality. Where’s my darn camera?!)

The mix:

  • 1/3 cup rolled oats
  • 1/3 cup almond breeze
  • 1/3 cup plain greek yogurt
  • 1/3 cup canned pumpkin
  • 1/2 mashed banana
  • 1 tbsp. pumpkin butter
  • 1 tbsp. chia seeds
  • 1 tbsp. flax seeds
  • vanilla extract
  • cinnamon
  • nutmeg
  • pumpkin pie spice
  • walnuts, sprinkled on top

Mix and refrigerate overnight.
