1. First, saute an onion, several cloves of crushed garlic, a green pepper, a zucchini, one 8 oz. pack of sliced crimini mushrooms and several chopped stalks of celery in some olive oil over medium-high heat.
2. Once that’s soft, add one 30 oz. can of crushed tomatoes with Italian seasoning, a 14 oz. can of diced tomatoes, 1 large chopped carrot, a bag of Morningstar Farms soy crumbles, 1/3 cup white wine, tomato paste (~2 tbsp.), 2 bay leaves, Italian seasoning and lots of crushed red pepper flakes. Season with salt and pepper to taste.
3. Bring to a boil, then cover and let simmer for at least 1 1/2 hours to let the flavors develop.
